  • 1 cup powdered sugar

  • 1 cup strawberry jam or preserves
  • 1 cup fresh chopped strawberries
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp strawberry puree or juice
  • 1 tbsp milk (as needed for consistency)
  • Fresh halved strawberries (for decoration)

Instructions

  1. Preheat oven to 325°F (163°C). Grease and flour three 8-inch cake pans.
  2. In a large bowl, cream together butter and cream cheese until fluffy. Gradually add sugar; beat until combined. Add eggs one at a time, mixing well after each addition.
  3. Stir in vanilla and sifted flour with salt until just combined. Divide batter among pans and bake for 30–40 minutes until a toothpick comes out clean.
  4. For the filling, whip heavy cream until soft peaks form; fold in powdered sugar and strawberry jam with chopped strawberries.
  5. Assemble by layering cooled cakes with filling; frost with remaining whipped mixture. Chill for at least 30 minutes.
  6. Drizzle with glaze made from powdered sugar and strawberry puree before serving.
