  • 2 tbsp granulated sugar
  • 1 large egg yolk
  • 2 cups all-purpose flour
  • 2 large eggs
  • ½ cup milk
  • 1¼ cup fresh strawberries
  • ⅔ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp flour (for tossing strawberries)
  • ⅓ cup all-purpose flour (for crumb topping)
  • 3 tbsp granulated sugar (for crumb topping)
  • 3 tbsp unsalted butter (for crumb topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin.
  2. In a bowl, beat cream cheese, granulated sugar, egg yolk, and vanilla until smooth; set aside.
  3. In another bowl, combine flour, baking powder, baking soda, salt, and sugar.
  4. In a separate bowl, whisk eggs, milk, oil, and vanilla until smooth.
  5. Combine wet and dry ingredients; fold in floured strawberries gently.
  6. Fill muffin cups halfway with batter; add cream cheese filling and cover with remaining batter.
  7. Bake for 18–22 minutes until golden brown; cool before serving.
