- 4 large eggs
- 1 cup whole milk
- 1 cup vegetable oil
- 1 cup mashed fresh strawberries
- 1 box white cake mix (15.25 oz)
- 1 box strawberry-flavored gelatin (3 oz, like Jell-O)
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1 cup unsalted butter, softened
- 2–3 cups powdered sugar, sifted
- 2 teaspoons vanilla extract
- 1 cup heavy whipping cream (cold)
- Optional: 34 drops red food coloring for a more vibrant pink
Instructions
- Preheat oven to 350F (175C). Grease three round cake pans.
- Mix cake mix and strawberry gelatin in a bowl; add eggs, milk, oil, strawberries, and vanilla. Beat until smooth.
- Pour batter into prepared pans and bake for 22-28 minutes or until a toothpick comes out clean.
- Cool cakes before frosting.
- For frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and whipped cream.
- Assemble by layering cakes with frosting in between each layer and cover the top and sides.
