  • 1 cup whole milk
  • 1 cup vegetable oil
  • 1 cup mashed fresh strawberries
  • 1 box white cake mix (15.25 oz)
  • 1 box strawberry-flavored gelatin (3 oz, like Jell-O)
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)
  • Optional: 34 drops red food coloring for a more vibrant pink

Instructions

  1. Preheat oven to 350F (175C). Grease three round cake pans.
  2. Mix cake mix and strawberry gelatin in a bowl; add eggs, milk, oil, strawberries, and vanilla. Beat until smooth.
  3. Pour batter into prepared pans and bake for 22-28 minutes or until a toothpick comes out clean.
  4. Cool cakes before frosting.
  5. For frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and whipped cream.
  6. Assemble by layering cakes with frosting in between each layer and cover the top and sides.
