Description

  • 2 pounds sirloin steak (cut into 1-inch cubes)
  • ½ cup extra virgin olive oil
  • ½ cup red apple vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 3 cloves garlic (minced)
  • salt and freshly ground black pepper (to taste)
  • 24 ounces baby portobello mushrooms (cleaned and stems removed)
  • 1 large red onion (cut into 1-inch pieces)
  • 1 cup plain yogurt
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh lemon juice
  • ½ cup finely chopped mint
  • salt and fresh ground black pepper (to taste)
  • drizzle of olive oil
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a mixing bowl, whisk together olive oil, vinegar, oregano, thyme, minced garlic, salt, and pepper.
  2. Add steak cubes to the marinade, cover, and refrigerate for 2 to 4 hours.
  3. Preheat your grill on medium heat for about 15 minutes.
  4. Thread marinated steak onto metal skewers, alternating with mushrooms and onions.
  5. Grill kabobs for 12-14 minutes, turning occasionally until browned and vegetables are tender.
  6. In a small bowl, combine yogurt, garlic, lemon juice, chopped mint, salt, and pepper for the dip.
  7. Serve grilled kabobs with yogurt dip after letting them rest for 5 minutes.
