Ingredients

  • 2 large eggs
  • 2 cups fresh spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked corn kernels (fresh, frozen, or canned)
  • Optional: 1 cup tuna chunks
  • 3 tbsp creamy salad dressing (ranch, Caesar, or yogurt-based)
  • Salt & pepper to taste

Instructions

  1. Boil the eggs in water for 7 minutes. Transfer to ice water to cool before peeling.
  2. Rinse the spinach leaves and halve the cherry tomatoes. Drain canned corn if using.
  3. In a large bowl, layer the spinach first, then add tomatoes and corn (and tuna if desired).
  4. Halve the boiled eggs and place on top. Drizzle with dressing and season with salt and pepper.
  5. Serve immediately for optimal flavor.
