  • 3 cloves garlic (grated)
  • ¼ teaspoon red pepper flakes
  • 1 lemon (zested and juiced)
  • 2 cups baby spinach
  • ½ cup parmesan cheese (freshly grated)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Boil spaghetti in salted water according to package instructions (9-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a skillet, melt butter over medium heat. Cook grated garlic and red pepper flakes for about 1 minute until fragrant.
  3. Add lemon juice and ½ cup reserved pasta water; bring to a bubble. Toss in spinach and drained spaghetti, mixing until spinach wilts.
  4. Remove from heat, then stir in lemon zest, parmesan cheese, salt, and black pepper.
