Ingredients
- 3 large eggs
- 2 cups cottage cheese
- 10 ounces frozen chopped spinach (thawed and drained)
- 1/3 cup crumbled feta cheese
- 1/3 cup diced sweet onion
- 1/4 cup melted butter
- 2 tablespoons freshly grated Parmesan cheese
- Black pepper, garlic powder, and nutmeg to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 1 & 1/2-quart casserole dish with butter or cooking spray.
- In a large mixing bowl, combine beaten eggs, cottage cheese, drained spinach, feta cheese, diced onion, melted butter, Parmesan cheese, black pepper, garlic powder, and nutmeg until well mixed.
- Pour the mixture into the greased casserole dish and spread evenly.
