Ingredients

Scale
  • 1.1 pounds russet potatoes (peeled and cut into 1-inch pieces)
  • ½ teaspoon salt
  • 1½ cups potato starch
  • ½ cup warm water
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 tablespoons gochugaru (or chili powder)
  • 2 tablespoons minced garlic
  • 3 tablespoons neutral oil (like sunflower or avocado)
  • Fresh cilantro for garnish

Instructions

  1. Boil the potatoes in salted water until fork-tender (10-15 minutes). Drain and mash until smooth.
  2. Mix in potato starch and knead until cohesive. Gradually add warm water until you achieve a pliable dough.
  3. Shape dough into half-inch thick noodles and boil in batches until they float (about 1 minute more). Transfer to cold water.
  4. For the chili oil, combine spices in a bowl and pour hot oil over them. Stir well.
  5. Mix cooked noodles with chili oil and chopped cilantro before serving.
