  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons finely chopped fresh cilantro
  • 1/4 cup grated cotija cheese (or Parmesan)
  • 2 tablespoons vegetable oil (for frying)
  • 1 tablespoon fresh lime juice (for garnish)
  • Additional chili powder and cotija cheese for garnish (optional)

Instructions

  1. In a mixing bowl, combine flour, cornmeal, baking powder, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
  2. Add eggs and milk to the dry mixture; stir until smooth.
  3. Fold in corn kernels and cotija cheese.
  4. Heat oil in a skillet over medium-high heat until shimmering.
  5. Spoon tablespoon-sized portions into the hot oil and flatten slightly; fry for about 2-3 minutes on each side until golden brown.
  6. Remove from oil and drain on paper towels; garnish with lime juice and additional cheese.
