- 2 tbsp gochujang
- 1 tbsp gochugaru (or ½ tsp chili flakes)
- 1/2 tbsp soy sauce
- 1 tsp rice apple vinegar
- 1/2 tbsp sugar
- 1/2 tsp toasted sesame oil
- 1/2 cup water
- 2 tbsp neutral oil (divided)
- 2 packs enoki mushrooms
- 1 clove garlic (minced)
Instructions
- In a small bowl, mix gochujang, gochugaru, soy sauce, rice vinegar, sugar, sesame oil, water, and optional Buldak sauce until smooth.
- Trim and rinse enoki mushrooms; break them into smaller bundles.
- Heat 1 tbsp oil in a large skillet over medium-high heat. Cook half the mushroom bundles until golden brown (about 1-2 minutes per side). Remove and repeat with remaining mushrooms.
- Add another tablespoon of oil to the skillet; sauté minced garlic until fragrant (about 30 seconds). Pour in the prepared sauce and bring to a simmer.
- Add cooked mushrooms back to the skillet; cook uncovered for 3-4 minutes until evenly coated with reduced sauce. Serve immediately.
