Description

Spicy Enoki Mushrooms are a deliciously crunchy and flavorful treat that can elevate any meal. Perfect for any occasion, these mushrooms boast a rich umami flavor enhanced by the spicy kick of gochujang sauce. Ingredients

  • 2 tbsp gochujang
  • 1 tbsp gochugaru (or ½ tsp chili flakes)
  • 1/2 tbsp soy sauce
  • 1 tsp rice apple vinegar
  • 1/2 tbsp sugar
  • 1/2 tsp toasted sesame oil
  • 1/2 cup water
  • 2 tbsp neutral oil (divided)
  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)

Instructions

  1. In a small bowl, mix gochujang, gochugaru, soy sauce, rice vinegar, sugar, sesame oil, water, and optional Buldak sauce until smooth.
  2. Trim and rinse enoki mushrooms; break them into smaller bundles.
  3. Heat 1 tbsp oil in a large skillet over medium-high heat. Cook half the mushroom bundles until golden brown (about 1-2 minutes per side). Remove and repeat with remaining mushrooms.
  4. Add another tablespoon of oil to the skillet; sauté minced garlic until fragrant (about 30 seconds). Pour in the prepared sauce and bring to a simmer.
  5. Add cooked mushrooms back to the skillet; cook uncovered for 3-4 minutes until evenly coated with reduced sauce. Serve immediately.
