Ingredients
- 3–4 lb lamb shoulder, bone-in
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- Salt and black pepper, to taste
- 1 cup dry white wine or chicken broth
- 2 cups seedless grapes
- 1 tbsp honey
- 1 tsp balsamic vinegar
Instructions
- Preheat your oven to 325°F (163°C).
- Mix olive oil, garlic, rosemary, salt, and pepper in a bowl. Rub this mixture all over the lamb.
- Place the lamb in a roasting pan and pour wine/broth around it. Cover with foil and roast for about 4 hours.
- In the last hour of cooking, toss grapes with honey and balsamic vinegar; add them around the lamb.
- Let the lamb rest for at least 15 minutes before carving.
