  • 6 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp ground black pepper
  • 2 tsp sea salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Place the lamb shoulder in a roasting pan.
  3. In a bowl, mix garlic, Dijon mustard, whole grain mustard, honey, rosemary, thyme, black pepper, and sea salt.
  4. Generously rub the glaze all over the lamb.
  5. Cover with foil and roast for 3-4 hours until tender.
  6. Remove foil for the last 30 minutes for crispy skin.
  7. Ensure the internal temperature reaches at least 145°F (63°C) for medium-rare.
  8. Let rest for 15 minutes before slicing.
