  • 1 lb chicken breast
  • 2 cups frozen corn
  • 2 medium russet potatoes
  • 1 white onion
  • 1 poblano or jalapeño pepper
  • 8 oz cream cheese
  • 6 cups chicken broth
  • 2 cloves garlic, diced or minced
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp sea salt
  • 1 tbsp olive oil or avocado oil
  • 1 chipotle pepper in adobo sauce, diced
  • 2 tbsp adobo sauce
  • 6 slices of Turkey Bacon
  • 2 limes (optional for garnish)
  • cilantro (optional for garnish)
  • 1/2 cup cotija cheese

Instructions

  1. Sauté diced onion, pepper, and garlic in oil until fragrant; transfer to slow cooker.
  2. Add corn, diced potatoes, chipotle pepper, adobo sauce, chicken breast, and chicken broth.
  3. Cover and cook on low for 6 to 8 hours.
  4. Stir in cream cheese during the last 30 minutes until melted.
  5. Serve topped with crumbled turkey bacon, cotija cheese, lime juice, and cilantro.
