Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp coconut oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 can (14 oz) full-fat coconut milk
- Salt and pepper to taste
- Rice and fries for serving
Instructions
- In a skillet, heat coconut oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic and ginger until fragrant.
