Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can (14 oz) full-fat coconut milk
  • Salt and pepper to taste
  • Rice and fries for serving

Instructions

  1. In a skillet, heat coconut oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic and ginger until fragrant.
  2. Stir in curry powder and other spices to coat the onions.
  3. Transfer mixture to a slow cooker and add beef cubes, coconut milk, diced tomatoes, tomato paste, salt, and pepper. Mix well.
  4. Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Serve hot over rice with crispy fries on the side.
