  • 4 fully cooked sausages (sliced into circles)
  • 1 onion (cut into pieces)
  • 1 bell pepper (cut into pieces)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • 2 ½ tbsp olive or avocado oil
  • ½ tsp salt
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • 1 tsp garlic (minced)
  • fresh basil or parsley (for garnish)

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat.
  2. Add sausage slices and sauté until browned. Remove from the skillet.
  3. In the same skillet, add remaining oil along with zucchini, onion, and bell pepper. Sprinkle with spices and salt; stir well.
  4. Cook until the onion is translucent and veggies are tender-crisp (about 5 minutes).
  5. Return sausage to the skillet with minced garlic; stir to combine and let flavors meld for a few minutes.
