  • 1 lb Andouille Sausage, sliced
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium yellow onion, diced
  • 1 medium zucchini, sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano

Instructions

  1. Preheat a large skillet over medium-high heat and add olive oil.
  2. Add sliced Andouille sausage and cook until browned (about 5 minutes). Remove from skillet.
  3. Sauté bell peppers and onions in the same skillet until softened (about 5 minutes).
  4. Add zucchini and garlic; cook until fragrant (around 2 minutes).
  5. Pour in chicken broth and sprinkle with paprika and oregano; stir to combine.
  6. Return sausage to the skillet, reduce heat to low, and let simmer for 10 minutes.
