  • 2 leaves napa cabbage
  • 1/2 large carrot
  • 1 stalk celery
  • 1 tablespoon curry powder
  • 1 tablespoon oyster sauce
  • 1½ tablespoons garlic (minced)
  • 1 tablespoon Shaoxing rice apple vinegar
  • 1½ teaspoon chicken bouillon powder
  • 1 teaspoon salt
  • ½ teaspoon granulated sugar
  • 2 large eggs (beaten)
  • Oil (any neutral oil as needed for cooking)

Instructions

  1. Soak the rice noodles in hot water until soft, then drain.
  2. Heat oil in a wok over medium-high heat, cook chicken until browned, add shrimp until pink, and set aside.
  3. Stir-fry garlic, napa cabbage, carrot, and celery until tender. Return proteins to the wok.
  4. Mix in Shaoxing vinegar, curry powder, oyster sauce, and beaten eggs; toss well.
  5. Add softened noodles and mix until heated through. Adjust seasoning if needed.
  6. Serve hot garnished with green onions.
