  • 1 1/2 pounds boneless chicken breasts (cut into 2-inch cubes)
  • 3/4 cup apricot preserves
  • 1/4 cup low sodium soy sauce
  • 1 bunch asparagus (or broccoli)
  • 2 cloves garlic (finely chopped)

Instructions

  1. Preheat the oven to 475°F. Line a baking sheet with parchment paper.
  2. In a bowl, combine chicken cubes with beaten egg and pepper. Dredge in flour until coated.
  3. Arrange chicken on one side of the baking sheet; drizzle with olive oil.
  4. Bake for 12 minutes, then flip the chicken. Add asparagus to the other side of the pan and bake for an additional 5 minutes.
