- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- 1. Season the beef chunks liberally with salt and pepper. In a Dutch oven over medium-high heat, heat olive oil and brown the beef in batches for about 5-7 minutes until browned on all sides. Remove and set aside.
- 2. In the same pot, sauté the onions and carrots for about five minutes until softened. Add minced garlic and tomato paste; stir for one minute until fragrant.
- 3. Return the beef to the pot along with thyme and bay leaves. Pour in the beef broth until all ingredients are submerged.
- 4. Bring to a simmer, then reduce heat to low, cover partially, and cook for about two hours or until the beef is tender.
