  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 4 medium carrots, chopped
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Season the beef chunks liberally with salt and pepper. In a Dutch oven over medium-high heat, heat olive oil and brown the beef in batches for about 5-7 minutes until browned on all sides. Remove and set aside.
  2. 2. In the same pot, sauté the onions and carrots for about five minutes until softened. Add minced garlic and tomato paste; stir for one minute until fragrant.
  3. 3. Return the beef to the pot along with thyme and bay leaves. Pour in the beef broth until all ingredients are submerged.
  4. 4. Bring to a simmer, then reduce heat to low, cover partially, and cook for about two hours or until the beef is tender.
  5. 5. Serve hot with crusty bread or mashed potatoes.
