  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 lb baby potatoes
  • 6 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tsp dried Italian herbs
  • Salt and pepper to taste
  • 8 oz cream cheese, softened

Instructions

  1. Prepare ingredients by rinsing and drying baby potatoes, and trimming excess fat from chicken breasts.
  2. Season both sides of the chicken with salt, pepper, and dried herbs; place in the bottom of the crockpot.
  3. Add baby potatoes on top of the seasoned chicken.
  4. In a bowl, mix softened cream cheese, minced garlic, grated Parmesan cheese, and chicken broth until smooth. Pour over chicken and potatoes.
  5. Cover and cook on low for 6-8 hours or high for 4 hours until chicken is tender.
  6. Serve hot with sauce drizzled over; add steamed veggies or bread if desired.
