  • 1 can Ro-tel diced tomatoes & green chilies
  • 1 can black beans
  • 1 can corn
  • Mexican cheese blend
  • Southwest spices (garlic powder, chili powder, smoked paprika)
  • Olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Cut chicken breasts in half lengthwise; season with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet; sear chicken until golden on both sides (3-4 minutes each).
  4. Sauté chopped onion in the same skillet for about 5 minutes.
  5. Mix in drained Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
  6. Return chicken to the skillet and top with the tomato-bean-corn mixture and cheese.
  7. Bake for 5-7 minutes until chicken reaches 165°F and cheese is melted.
