- 1/4 cup shredded coconut (plus 3 tbsp)
- 1/2 cup creamy almond butter
- 3 tbsp pure maple syrup
- 2 medjool dates (pitted)
- 1 tsp vanilla extract
- 1/2 cup rolled oats
- 1 scoop vanilla protein powder
- 1/4 tsp kosher salt
- 1 tbsp chia seeds
- 1 tbsp mini chocolate chips
- For coating: 1/2 cup chocolate chips
- 1/2 tsp coconut oil
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper. Spread shredded coconut evenly and toast for about 5 minutes, stirring halfway through.
- In a food processor, blend almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt until well combined.
- Stir in toasted coconut, chia seeds, and mini chocolate chips. Form into tablespoon-sized balls.
- Melt chocolate chips and coconut oil in a microwave-safe bowl until smooth. Dip the bottoms of each ball in the melted chocolate and place on the lined sheet.
- Drizzle remaining chocolate over the balls and sprinkle with remaining toasted coconut. Refrigerate for about an hour until chocolate hardens.
