  • 1/4 cup shredded coconut (plus 3 tbsp)
  • 1/2 cup creamy almond butter
  • 3 tbsp pure maple syrup
  • 2 medjool dates (pitted)
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/4 tsp kosher salt
  • 1 tbsp chia seeds
  • 1 tbsp mini chocolate chips
  • For coating: 1/2 cup chocolate chips
  • 1/2 tsp coconut oil

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper. Spread shredded coconut evenly and toast for about 5 minutes, stirring halfway through.
  2. In a food processor, blend almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt until well combined.
  3. Stir in toasted coconut, chia seeds, and mini chocolate chips. Form into tablespoon-sized balls.
  4. Melt chocolate chips and coconut oil in a microwave-safe bowl until smooth. Dip the bottoms of each ball in the melted chocolate and place on the lined sheet.
  5. Drizzle remaining chocolate over the balls and sprinkle with remaining toasted coconut. Refrigerate for about an hour until chocolate hardens.
