Ingredients
- 8 pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 10 oz sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil (for frying)
- 4 oz cream cheese (softened)
- ½ cup powdered sugar
Instructions
- Soak the pineapple rings in dark and coconut rums for at least one hour. Drain and pat dry.
- Set up three shallow bowls: one with flour, one with a mixture of whisked eggs and coconut milk, and the last with sweetened coconut flakes.
- Dip each pineapple ring first in the flour, then in the egg mixture, and finally into the coconut flakes.
