Ingredients

  • 3 white onions
  • 5 cloves garlic
  • 3 mixed peppers
  • 500 g sweet potatoes
  • 6 salad tomatoes
  • 500 g carrots
  • Fresh herbs (rosemary, sage, Italian herb)
  • 100 ml single cream
  • 800 ml vegetable stock
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice all vegetables and place them on a large baking tray. Drizzle with olive oil, sprinkle with salt, pepper, rosemary, sage, and Italian herbs. Toss to coat.
  3. Roast for 30-35 minutes until golden brown and tender; stir halfway through.
  4. Transfer roasted veggies to a large pot; add vegetable stock and single cream. Blend until smooth using an immersion blender.
  5. Heat gently on medium until warmed through. Adjust seasoning if needed and serve hot.
