Ingredients

  • 1 loaf baguette bread
  • 23 tablespoons olive oil
  • Sea salt flakes and freshly ground pepper
  • Fresh basil for garnish
  • 1 ball burrata cheese
  • 2 cups cherry tomatoes (for roasting)

Instructions

  1. Preheat oven to broil.
  2. Slice the baguette diagonally into 12-14 half-inch thick slices and place on a baking sheet. Brush both sides lightly with olive oil.
  3. Broil for 2-4 minutes until golden brown, keeping a close watch to prevent burning.
  4. Remove from oven and transfer to a serving platter.
  5. Top each crostini with a generous scoop of burrata cheese and add 2 roasted cherry tomatoes on top.
