  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped roasted red peppers
  • 2 tablespoons fresh basil, chopped
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • ½ cup chicken broth
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix mozzarella, roasted red peppers, basil, and optional red pepper flakes.
  3. Slice pockets into each chicken breast; season inside and out with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  4. Stuff each pocket with the cheese mixture and secure with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown.
  6. Add minced garlic to the skillet and cook for about 30 seconds. Pour in chicken broth and balsamic vinegar while deglazing the pan.
  7. Transfer the skillet to the oven and bake for 18-22 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. Let rest for 5 minutes before serving.
