Ingredients

  • 8 oz spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup bell peppers, chopped
  • ½ small red onion, finely diced
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop cucumber, bell peppers, cherry tomatoes, and red onion.
  3. In a bowl, combine olive oil, lemon juice, oregano, salt, and pepper; whisk until blended.
  4. In a large bowl, combine cooled spaghetti and chopped veggies. Pour the dressing over and gently toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
