  • 2 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 cup dry apple vinegar
  • 2 cups beef or veal stock
  • Fresh thyme sprigs

Instructions

  1. Prepare all ingredients on your counter.
  2. In a Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper, then sear until browned on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  4. Stir in tomato paste; pour in apple vinegar while scraping the bottom of the pot.
  5. Return lamb shanks to the pot; add stock and thyme sprigs. Bring to a simmer.
  6. Cover and cook on low heat for 2-3 hours until lamb is fork-tender.
