  • 200 g dark chocolate
  • 200 g unsalted butter
  • 275 g caster sugar
  • 4 medium eggs (or 3 large)
  • 150 g plain flour
  • 50 g cocoa powder
  • 300 g raspberries
  • 150 g chocolate chips

Instructions

  1. Preheat the oven to 180C/160C Fan and line a 9×9 inch square tin with parchment paper.
  2. In a saucepan over low heat, melt dark chocolate, unsalted butter, and caster sugar together.
  3. Once melted, cool the mixture for about 10 minutes before adding eggs one at a time.
  4. Stir in plain flour and cocoa powder until just combined; avoid overmixing.
  5. Gently fold in two-thirds of the raspberries and pour the batter into the prepared tin.
  6. Sprinkle remaining raspberries and chocolate chips on top.
  7. Bake for 30-35 minutes until fudgey but set; cool completely before slicing.
