Ingredients

- 350g button chestnut mushrooms
- 2 medium parsnips, sliced
- 250g swede, chopped
- 800 ml vegetable stock
- Fresh rosemary and thyme
- Tomato paste and soy sauce
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, celery, and carrots until softened (5-7 minutes).
- Add mushrooms, rosemary, and thyme; cook until mushrooms release moisture.
- Stir in minced garlic, tomato paste, soy sauce; cook for another minute.
- Sprinkle flour over the mixture; stir to combine.
- Gradually add red apple vinegar and vegetable stock along with bay leaves, salt, and pepper.
- Mix in parsnips and swede; bring to a boil. Reduce heat and simmer for 45 minutes until tender.
