  • 4 boneless, skinless chicken breasts
  • 18 (6-inch) corn tortillas
  • 1 (28 oz) can green chile enchilada sauce
  • 1 (16 oz) package shredded Monterey Jack cheese
  • 1 (8 oz) container reduced-fat sour cream
  • Garlic salt (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Season chicken breasts with garlic salt and bake for 45 minutes until cooked through (165°F internal temperature).
  3. Shred the chicken after cooling.
  4. Layer enchilada sauce in the baking dish, followed by tortillas, half of the shredded chicken, one-third of the cheese, half of the sour cream, and some enchilada sauce. Repeat layers.
  5. Cover with foil and bake for another 45 minutes.
