Ingredients
- 4 large ripe plantains
- 1 lb ground beef
- 2 tsp adobo seasoning
- 1 tbsp sazon seasoning
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 green bell pepper (minced)
- ¼ cup fresh cilantro (chopped)
- ⅓ cup olives or capers
- 1 cup tomato sauce
- 2 cups dairy-free cheese
- 3 large eggs (beaten)
- Coconut oil for frying
Instructions
- Preheat oven to 356°F (180°C). Grease a casserole dish.
- In a bowl, season ground beef with adobo and sazon. Set aside.
- Sauté minced onion, garlic, and bell pepper in coconut oil until soft. Add ground beef and cook until browned.
- Mix in tomato sauce and olives; simmer for 5-10 minutes.
- Prepare plantains by slicing them into strips and frying until golden brown.
- Layer plantains at the bottom of the casserole dish, followed by a layer of ground beef mix and cheese. Repeat layers until ingredients are used up.
- Finish with a top layer of plantains and an egg wash before baking for about 20 minutes until golden.
