  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 6 tablespoons cold unsalted butter (84 grams), diced
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup chocolate chips or chopped chocolate
  • 2/3 cup heavy cream, plus more for brushing
  • Coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, salt, and pistachio pudding mix.
  3. Incorporate cold butter until the mixture resembles coarse crumbs.
  4. Create a well in the dry ingredients; add vanilla, egg, and half the heavy cream. Mix until combined, adding more cream as needed.
  5. Transfer dough to a floured surface; split into two halves. Shape each half into a rectangle and fold in chocolate.
  6. Cut each rectangle into triangles and place on the baking sheet. Brush tops with heavy cream and sprinkle with coarse sugar.
  7. Bake for 13-15 minutes until golden brown. Cool before serving.
