- ½ cup low sodium soy sauce
- ½ cup pineapple juice
- 2 tablespoons brown sugar
- 2 tablespoons honey (or maple syrup)
- 4 cups broccoli florets
- 20 ounces canned pineapple chunks
- Red bell pepper
- Red onion
- 2 ½ tablespoons avocado oil or olive oil (divided)
- Salt and pepper to taste
Instructions
- Prepare the teriyaki sauce by whisking together soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a medium bowl.
- Heat oil in a large skillet over medium-high heat. Add seasoned chicken pieces and cook until browned and cooked through (7-10 minutes). Transfer to a plate.
- In the same skillet, sauté chopped red onion, bell pepper, and broccoli for about 4 minutes until tender-crisp.
- Return chicken to the skillet along with pineapple chunks and pour in the teriyaki sauce. Stir well and cook for an additional 1-2 minutes until the sauce thickens slightly.
