  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • ½ cup low sodium soy sauce
  • ½ cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons honey (or maple syrup)
  • 4 cups broccoli florets
  • 20 ounces canned pineapple chunks
  • Red bell pepper
  • Red onion
  • 2 ½ tablespoons avocado oil or olive oil (divided)
  • Salt and pepper to taste

Instructions

  1. Prepare the teriyaki sauce by whisking together soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a medium bowl.
  2. Heat oil in a large skillet over medium-high heat. Add seasoned chicken pieces and cook until browned and cooked through (7-10 minutes). Transfer to a plate.
  3. In the same skillet, sauté chopped red onion, bell pepper, and broccoli for about 4 minutes until tender-crisp.
  4. Return chicken to the skillet along with pineapple chunks and pour in the teriyaki sauce. Stir well and cook for an additional 1-2 minutes until the sauce thickens slightly.
  5. Serve over rice if desired and garnish with green onions.
