  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • For the sauce: soy sauce, honey, sriracha sauce, olive oil, grated ginger

Instructions

  1. Rinse the jasmine rice under cold water until clear. Cook with water in a rice cooker or pot according to package instructions.
  2. Heat olive oil in a skillet over medium heat. Add chicken; season with salt and pepper. Cook until browned (5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté onion, bell peppers, garlic, and ginger until tender (about 5 minutes).
  4. Return chicken to skillet; add pineapple chunks and sauce ingredients. Stir well and cook for another 5-7 minutes until everything is heated through.
  5. Serve over fluffy jasmine rice and garnish with fresh cilantro.
