  • 2 cups chicken broth (or vegetable broth for vegan)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the chicken, onion, garlic, red bell pepper, and pineapple into bite-sized pieces.
  2. In a skillet over medium heat, add olive oil and cook the cubed chicken until browned (about 5–7 minutes). Season with salt and pepper.
  3. Add the onion, garlic, and red bell pepper; sauté for 3–4 minutes until softened.
  4. Stir in jasmine rice, chicken broth, soy sauce, ginger, and pineapple. Bring to a boil.
  5. Reduce heat to low, cover the skillet, and let simmer for 15–20 minutes until rice is cooked through.
  6. Fluff the rice gently with a fork before serving and garnish with green onions and sesame seeds.
