  • 2 tbsp olive oil
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • Green onions for garnish

Instructions

  1. Heat oil in a skillet over medium heat. Sauté cubed chicken until browned and cooked through. Remove chicken from the pan.
  2. In the same pan, add minced garlic and sauté briefly. Pour in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for about 5 minutes.
  3. Mix cornstarch with water to create a slurry and stir into the sauce until thickened.
  4. Return chicken to the pan along with pineapple chunks and diced bell pepper; toss to coat in sauce.
  5. Stir in cooked rice until heated through.
  6. Serve hot, garnished with chopped green onions.
