  • 8 oz sliced mushrooms
  • 2 tsp olive oil
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Italian Blend cheese
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 tsp garlic powder
  • 2 oz sliced pepperoni
  • Optional: black olives and Italian herb seasoning

Instructions

  1. Preheat your oven to 400F (200C) and spray a glass pie dish with non-stick spray.
  2. Heat olive oil in a non-stick frying pan over medium-high heat and sauté mushrooms until browned.
  3. In a mixing bowl, combine the cheeses and Italian herb seasoning.
  4. In another bowl, beat eggs and stir in heavy cream and garlic powder until mixed well.
  5. Layer cheese mixture in the pie dish followed by sautéed mushrooms and optional olives.
  6. Top with pepperoni slices and bake for 30-35 minutes or until set.
  7. Let cool for a few minutes before slicing and serving.
