  • 3/4 English cucumber, chopped
  • 1 small red bell pepper, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup roasted and salted pepitas (or sunflower seeds)
  • 1/2 cup pomegranate seeds (or dried cranberries)
  • 1/2 cup crumbled feta cheese
  • 1 5.3 oz. container Pomegranate Greek Yogurt
  • 3 tablespoons Asian Sweet Chili Sauce
  • 3 tablespoons pomegranate juice
  • 2 tablespoons mayonnaise
  • 12 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon poppy seeds (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the dressing by whisking together all dressing ingredients in a medium bowl. Chill in the refrigerator.
  2. In a large bowl, combine the salad mix with sliced pears, cucumber, bell pepper, onion, pepitas, pomegranate seeds, and crumbled cheese.
  3. Drizzle desired amount of dressing over the salad just before serving and toss gently to coat.
