- 1 lb ground chicken or turkey
- 4 tablespoons soy sauce
- 3 tablespoons oyster sauce
- 1 tablespoon sambal oelek (chili paste)
- 12 leaves of Boston lettuce
- 1/2 cup chopped lightly salted peanuts
- 3 tablespoons water
- 1 tablespoon honey
- 1 tablespoon fresh ginger (I use a paste)
- juice of 2 limes
- 2 garlic cloves, minced
- 4 green onions, minced
- 1 tablespoon rice vinegar (optional – makes it more tangy)
- 1 teaspoon cornstarch (optional – helps the sauce thicken)
- 2 tablespoons sesame oil
Instructions
- In a small bowl, whisk together the soy sauce, oyster sauce, sambal oelek, honey, ginger, lime juice, garlic, green onions, rice vinegar, cornstarch (if using), and sesame oil.
- Combine about 3/4 of the sauce with the ground chicken and peanuts in a mixing bowl; marinate for at least 15 minutes.
- In a skillet over medium heat, sauté the marinated chicken mixture for about 10 minutes or until cooked through.
- Serve scoops of the mixture in lettuce leaves and drizzle with remaining sauce. Top with cilantro and additional peanuts as desired.
