Ingredients
- 1 lb. ground chicken or turkey
- 6 ounces rice noodles
- 12 leaves of lettuce (Boston preferred)
- 4 tablespoons soy sauce
- 3 tablespoons oyster sauce
- 3 tablespoons water
- 1 tablespoon sambal oelek (chili paste)
- 1 tablespoon honey
- 1 tablespoon fresh ginger (paste)
- juice of 2 limes
- 2 garlic cloves, minced
- 4 green onions, minced
- 1 tablespoon rice vinegar (optional)
- 1 teaspoon cornstarch (optional)
- 2 tablespoons sesame oil
- 1/2 cup lightly salted peanuts, chopped
- chopped cilantro, green onions, and peanuts for topping
Instructions
- In a small bowl, whisk together all sauce ingredients until well combined. Pour about 3/4 of the sauce into another bowl with ground chicken and chopped peanuts. Stir everything together until well mixed. Let it marinate for 15 minutes.
- In a large bowl, soak rice noodles in water while the meat marinates. Once softened, drain and rinse noodles with cold water. Cut noodles into small pieces to make them easier to incorporate into wraps.
- Heat sesame oil in a large skillet over medium heat. Add marinated chicken-peanut mixture to the skillet. Sauté for about 10 minutes or until fully cooked through. Stir in soaked noodles and fry for an additional 5 minutes until soft. If needed, add splashes of water or extra sauces to keep things moist.
- Remove mixture from heat once cooked through. Scoop portions of the filling into each lettuce leaf. Top with chopped cilantro, green onions, peanuts, and drizzle with reserved sauce before serving.
