Ingredients

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons roasted and salted peanuts (optional)
  • 1 cup chocolate chips or chopped chocolate
  • 2 tablespoons coconut oil

Instructions

  1. Line a baking sheet with wax paper.
  2. In a mixing bowl, combine Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract until smooth.
  3. Using an ice cream scoop, form mounds on the baking sheet and insert popsicle sticks into each mound.
  4. Sprinkle roasted peanuts on top.
  5. Freeze for at least 2 hours until solid.
  6. Melt chocolate chips and coconut oil in the microwave; dip each frozen mound into the melted chocolate.
  7. Return to the baking sheet and freeze again until set.
