  • 8 eggs
  • 1 ½ cups granulated sugar
  • 1 ½ cups + 2 Tbsp all-purpose flour (sifted)
  • ⅓ cup peach juice (from canned peaches)
  • 34 Tbsp Amaretto Di Amore Liqueur (or similar)
  • 3 ¾ cups heavy cream
  • 1 cup + 2 Tbsp peach jam/preserve

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans with butter and parchment paper.
  2. In a large mixing bowl, whisk eggs and sugar until light and fluffy. Gradually add sifted flour, peach juice, liqueur, vanilla, and almond extract, mixing until combined.
  3. Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow cooling before transferring to wire racks.
  4. For the whipped cream, beat heavy cream until soft peaks form; then mix in powdered sugar and vanilla until stiff peaks form.
  5. Assemble the cake by layering one cake on a serving plate, spreading peach jam and whipped cream between layers along with halved peaches and sliced almonds. Top with the second layer and cover the entire cake with remaining whipped cream.
