  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature
  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 tablespoons cold unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. For the crust, mix graham cracker crumbs, sugar, and melted butter in a bowl until moistened. Press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined. Pour over the crust.
  4. For the topping, mix sliced peaches with flour, sugar, cinnamon, and nutmeg in a separate bowl. Pour this mixture over the cheesecake layer and dot with pieces of cold butter.
  5. Bake for 45–50 minutes until set and golden brown on top. Let cool completely before slicing into bars.
