  • 3 ripe peaches (peeled, pitted, diced)
  • 2 Altualfo mangoes (peeled, pitted, diced)
  • 2 tomatoes (chopped)
  • 1 bell pepper (finely diced)
  • 1/4 red onion (finely diced)
  • 2 garlic cloves (minced)
  • 1 jalapeño (finely diced)
  • 1 tablespoon cilantro (finely chopped)
  • Juice of 1 lime
  • Sea salt to taste

Instructions

  1. Start by peeling the peaches and mangoes. Cut around the mango pit and scoop out the flesh into small squares.
  2. Chop all other ingredients: keep the peaches, mangoes, and tomatoes slightly larger for texture while finely dicing onion, garlic, bell pepper, and jalapeño.
  3. In a mixing bowl, combine all chopped ingredients. Squeeze lime juice over the mixture and add cilantro.
  4. Season with sea salt and black pepper to taste; mix well until combined.
