  • 10 oz challah or French bread (cut into large chunks)
  • 24 oz frozen sliced peaches (thawed and drained)
  • 1 1/4 cups almond milk
  • 5 eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tsp light butter

Instructions

  1. Grease a 13×9 casserole dish with cooking spray and arrange the bread chunks evenly.
  2. In a bowl, whisk together eggs and sugar; then add almond milk, vanilla extract, ground cinnamon, and salt until well combined.
  3. Pour the egg mixture over the bread, pressing down gently to ensure it's soaked.
  4. Cover and refrigerate overnight.
  5. Preheat your oven to 350°F (175°C). Add thawed peaches on top of the soaked bread.
  6. In another bowl, combine flour, brown sugar, light butter, and cinnamon for the streusel topping; sprinkle over the peaches.
  7. Bake uncovered for 45–60 minutes until golden brown and set. Let cool for about 10 minutes before serving.
