Ingredients
- 10 oz challah or French bread (cut into large chunks)
- 24 oz frozen sliced peaches (thawed and drained)
- 1 1/4 cups almond milk
- 5 eggs
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tsp light butter
Instructions
- Grease a 13×9 casserole dish with cooking spray and arrange the bread chunks evenly.
- In a bowl, whisk together eggs and sugar; then add almond milk, vanilla extract, ground cinnamon, and salt until well combined.
- Pour the egg mixture over the bread, pressing down gently to ensure it's soaked.
- Cover and refrigerate overnight.
- Preheat your oven to 350°F (175°C). Add thawed peaches on top of the soaked bread.
- In another bowl, combine flour, brown sugar, light butter, and cinnamon for the streusel topping; sprinkle over the peaches.
