  • 16 ounces rotini pasta
  • 1 medium cucumber, chopped
  • 1 pint grape tomatoes, halved
  • 1 small bell pepper, chopped
  • ¼ cup finely diced red onion
  • 1 cup Italian dressing
  • ⅔ cup crumbled feta cheese
  • Optional: black olives, fresh parsley, salt, and pepper

Instructions

  1. Cook the rotini in salted boiling water according to package instructions until al dente, then drain and rinse under cold water.
  2. While the pasta cools, chop the cucumber, halve the grape tomatoes, dice the bell pepper, and onion.
