  • 16 ounces rotini pasta
  • 1 medium cucumber, chopped
  • 1 pint grape tomatoes, halved
  • 1 small bell pepper, chopped
  • 1/4 cup finely diced red onion
  • 1 cup Italian dressing
  • 2/3 cup crumbled feta cheese
  • 1/4 cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cucumber, halve the grape tomatoes, dice the bell pepper, and finely chop the red onion.
  3. In a large mixing bowl, combine the cooled pasta with the chopped vegetables, Italian dressing, feta cheese, olives, and parsley. Season with salt and black pepper.
  4. Gently mix until all ingredients are well combined. For best flavor, chill in the fridge for at least one hour before serving.
