Ingredients

  • 1 salmon fillet (skin-on or skinless)
  • 1 tbsp olive oil
  • 1 cup cooked white rice
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 garlic clove, minced
  • Salt and cracked black pepper to taste
  • Optional: squeeze of lemon

Instructions

  1. Season the salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown. Remove from heat.
  2. In the same skillet, add another tablespoon of olive oil and sauté minced garlic for about 30 seconds until fragrant. Add zucchini and cook for 3 minutes, then add cherry tomatoes and spinach until wilted.
  3. Stir in the cooked rice and season with salt and pepper. Mix well until heated through.
  4. Serve the veggie rice in a bowl topped with seared salmon. Add lemon juice if desired.
