  • 1/3 cup granulated sugar (for the orange curd filling)
  • 2 large egg yolks or 1 large egg (for the orange curd filling)
  • 3 Tbsp freshly squeezed orange juice (for the orange curd filling)
  • 1/4 tsp fine salt (for the orange curd filling)
  • 2 Tbsp unsalted butter, cut into small pieces (for the orange curd filling)
  • 1 cup unsalted butter (for the frosting)
  • 1 Tbsp orange zest (for the frosting)
  • 1/4 tsp fine salt (for the frosting)
  • 3 1/2 cups powdered sugar (for the frosting)
  • 3 Tbsp fresh orange juice (for the frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tins with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a separate bowl, cream together sugar and butter until fluffy. Add sour cream, orange juice, egg, vanilla extract, and zest; mix well.
  4. Gradually incorporate dry ingredients until just combined.
  5. Pour batter into liners until two-thirds full. Bake for 15–19 minutes or until a toothpick comes out clean. Cool completely before filling with orange curd and frosting.
